This warming chicken casserole is one of my favourite fuss-free dishes to make. It combines chicken, apples and wholegrain mustard in a rich, creamy stew. Best of all? It takes only 5 minutes to prepare with limited chopping needed (who doesn’t love that?!). Serve with crisp green beans and crusty ciabatta bread, or your choice of veggies.
This recipe is enough to serve 2 people.
Ingredients
Chicken and Apple Casserole
- 250 grams skinless and boneless chicken thighs, diced
- 1 teaspoon flour
- 1 apple, chopped into wedges (core removed)
- 1 brown onion, chopped into wedges
- 2 garlic cloves, crushed
- 1 chicken stock cube, dissolved in 200 milliliters of boiling water
- 1 tablespoon Chinese rice wine*
- 1½ tablespoons wholegrain mustard
- 50 grams soft cheese**
- Pepper, to taste
Garnish
- 5 grams chopped chives
Serve with Green Beans and Crusty Ciabatta
- 80 grams fine green beans, trimmed
- Pinch of salt
- 2 ciabatta bread rolls**
Instructions
- Preheat the oven to 220 degrees Celsius (or 200 degrees Celsius when using a fan oven).
- To cook the chicken: Heat a large oven-proof casserole dish with a drizzle of oil over a medium-high heat. Add the diced chicken with the teaspoon of flour. Stir until the chicken is covered by the flour (about 30 seconds). Add the apple and onion wedges along with the garlic and give everything a good stir. Then add the chicken stock, Chinese rice wine, wholegrain mustard and soft cheese and stir through. Bring the casserole to a boil over a high heat, then put the dish in the oven, uncovered, for 30 to 35 minutes or until the chicken is cooked through. Season with pepper to taste.
- To bake the green beans and ciabatta: Add the green beans to one side of a baking tray and drizzle with oil and a pinch of salt (use parchment paper to avoid the mess!). To the other side of the tray, add the ciabatta rolls. Put the tray in the oven for 7 to 9 minutes or until the green beans are tender but retaining a bite and the ciabatta rolls are warm and crusty.
- To serve, sprinkle the chopped chives over the chicken and serve with the green beans and crusty ciabatta to the side.
Notes
*you can use dry sherry or white wine as an alternative
**when detoxing, I skip the bread and omit the soft cheese and the dish remains just as delicious
